Pasta Sauce
Pasta Sauce (preparation time 30 mins, cooking time 30 mins)
500g (approx.) mince
oil
200g mushrooms, peeled & chopped
½ red capsicum, chopped
½ green capsicum, chopped
1 brown onion, chopped
crushed garlic
1 x 750ml bottle of Italian pasta sauce
2 x 400g diced tinned tomatoes
1 tablespoon brown sugar
dash of sweet chilli sauce
kalmata pitted olives
- Using a large fry pan, cook garlic, onion and mince until the mince is brown. Then add mushrooms and cook until soft.
- Add capsicums and fry for a couple of minutes, then add in pasta sauce and tinned tomatoes.
- Now add in brown sugar, dash of sweet chilli sauce and olives. Simmer covered for 30 mins and serve. (an Italian friend once told me that the best pasta sauce simmers for several hours on the stove before serving, if you have time to do this try it – it really improves the flavour)
This recipe freezes really well, so any leftovers can be put into containers once cooled and frozen.
