Garlic & Rosemary Lamb Rack

Garlic & Rosemary Lamb Rack (preparation time 10 mins, cooking time 20-30 mins)

lamb rack (5-7 cutlets)
crushed garlic
fresh rosemary
oil
aluminium foil

  1. Pre-heat oven to 180 degrees, then heat oil in a fry pan and quickly sear the lamb rack on both sides to caramelise.  Remove from heat.
  2. Then using a sharp knife put 5-6 holes in the meat on top of the lamb rack, and insert a rosemary sprig in each.  Then using a spoon smear the crushed garlic on the top of the rack.
  3. Use the aluminium foil to cover the bones on the lamb rack and then place in a roasting dish in the oven for 20+ mins dependant on your taste.  Allow to stand for 10 mins (covered) prior to serving.
