Sausage Casserole

Sausage Casserole (preparation time 15 mins, cooking time 1 hr)

8-10 sausages
1 brown onion, finely chopped
1 carrot, finely chopped
1 cup of frozen peas and corn
1-2 teaspoons curry powder (dependant on your taste)
2 tablespoons plain flour
1 ½ cups of beef stock
2 tablespoons of relish or chutney

  1. Preheat oven to 180 degrees
  2. Place the sausages, brown onion, carrot and frozen vegetables in a casserole dish
  3. Place the curry powder, plain flour, beef stock and relish or chutney in a bowl, and stir until combined.  Pour this mixture over the sausages and vegetables.
  4. Cover casserole dish and place in the oven for 1 hr, stirring ½ way through.

This meal can be prepared the day before and refrigerated, or frozen for a convenient meal in the future.
